Waking up in the morning is the absolute worst part of my day. I don’t even have to get up that early, but I dread hearing my alarm go off at 6:10am (the latest time possible), but I hop out of bed and begin our daily sprint morning routine. It has to be timed just right, because we have exactly 40 minutes from wake-up to pulling out of the driveway. I used to skip breakfast simply because I didn’t have enough time in the morning, and refused to wake up 10 minutes earlier to eat. However, now that I am pregnant, I am absolutely starving the minute I wake up so I need to eat.
When I heard about Jimmy Dean Delights breakfast sandwiches, I was intrigued, but felt I needed to learn more. First off, I’ve never been able to find a vegetarian friendly pre-made breakfast sandwich, but when I was browsing at Walmart, I noticed that Jimmy Dean did have a veggie option- the Egg White with Spinach & Mozzarella-Style Cheese Product Honey Wheat Flatbread. Not only was it low calorie (only 160 calories!), but also was a good source of morning protein! It looked great and I was excited to try it out!
In preparation to trying this breakfast sandwich out, I wanted to make something else to balance it out and that would help keep me full until my 1pm lunch. I checked the fridge and decided to throw together a fresh fruit parfait.
I used 1/2 cup of Greek yogurt, 1 small apple, and 1 tablespoon of natural honey. I cut up the apple, and then layered the ingredients into a smaller mason jar. I popped it in the fridge so I would just have to take it out in the morning.
The next morning I took out my Jimmy Dean Delights Breakfast Sandwich and popped it in the microwave. While that was cooking I took out my Greek yogurt parfait and sat down with my son to eat. It was so nice being able to sit together and eat in the morning, something we usually don’t have time to do. I ate a few bites of my yogurt and already the breakfast sandwich was done.
I was able to finish up my breakfast in 5 minutes, pack up my stuff, and get out the door with my son just in time! I am going to stick to this routine of preparing something the night before (such as the yogurt parfait), and then cooking the Jimmy Dean Delights Breakfast Sandwich in the morning. With only 160 calories in the breakfast sandwich and about 180 calories in the parfait, that puts this healthy, filling breakfast at 350 calories. This is totally do-able and it keeps me full until lunch time!
