Over at our house, we love popcorn! I love taking out our popcorn maker and popping up a batch of fresh popcorn for movie nights! Since getting it a couple years ago, I just can’t eat microwave popcorn because the taste is so much different. Another thing we love, well, I should say another thing my husband loves is hot sauce! I am always trying to think up ways to try new hot sauces and incorporate their flavors into our meals. My husband is a big fan of El Yucateco Hot Sauce, and actually inspired me to come up with this spicy and sweet kettle corn recipe. I love the sweet taste ...

‘Buttermilk’ Kefir Biscuits with Summer Berry Compote
Until I moved to the south, I don’t think I really had a genuinely delicious biscuit that made me proclaim, ‘I love biscuits!’ But after being to a couple real southern restaurants, I learned what a real biscuit was supposed to taste like…fluffy, buttery, light and airy, and most of all delicious. I have become obsessed with fresh biscuits, and I love making them at home. If you have made biscuits at home, you probably know there are a ton of different ways to make them, and most yield different types of results…all delicious! We love using Lifeway Kefir at our house, so I wanted ...
3 Herb Garlic Cheese Bread
We are HUGE dippers at my house. My husband often ‘jokes’ that whatever we are eating is just a vehicle for the sauce…because it’s all about the sauce! Over the weekend I decided to cook up some delicious cheesy bread to take to a Mother’s Day BBQ, and I knew that Barilla® Sauce would be the perfect dipping sauce. Of course, I was right! I used some dough I whipped up the night before and then added fresh herbs from my garden and mounds of delicious mozzarella cheese. Can’t go wrong with that! Using the fresh herbs definitely brings something extra to the regular ...
Easy Homemade Vegetarian Chipotle Enchilada Sauce
I’m not going to lie, I had never tried making enchilada sauce at home until about a year ago. I was a serious Old El Paso girl. That red sauce in the yellow can seemed perfect always and I was happy to buy it. However, then I tried making it at home, and I was BLOWN away. Not only because there are so many varieties you can make, but because it’s so much healthier and it tastes SO much better…like so much better. I found a recipe for some Chipotle Enchilada sauce, but it had chicken stock in it which meant it wasn’t technically vegetarian. Sometimes I let things ...
Cilantro Lime Dip
Now that summer is rapidly approaching, I love thinking up new dips that will be great for BBQ’s and get togethers. We eat chips pretty much year round, and I love coming up with new dips, but I was thinking I wanted to make something light and summery! Now, even thought we eat Mexican food year round, I always associate eating Mexican and drinking margaritas during the summer, outside on a patio. Really, what’s better than that?! I am so looking forward to July when I have this baby and can drink a good ‘ole margarita again! Anyway, back to the dip! This ...
20 minute Cheesy Veggie Pasta Bake
In an effort to spend more time as a family eating, we decided to throw together an Easy Cheesy Veggie Pasta Bake for dinner. Taking less than 20 minutes from start to finish, it is a super quick and easy family friendly meal. Who doesn't love pasta, anyway?! First, I boiled some water and added the noodles. While those started to cook I diced up some zucchini and mushrooms. When the pasta was about 2 minutes from being cooked, I tossed those veggies right into the water with the pasta, and let cook for the remaining 2 minutes. Next, I drained the pasta/veggies, and then added them ...
