Gosh, I just love salt. I know it’s not great for you, and you probably shouldn’t eat too much of it, but when you do eat it, PLEASE eat the good stuff. I prefer kosher or sea salt. They are the best options for roasting vegetables by far. You are doing yourself an injustice if you are roasting your veggies with table salt…just don’t do it. If you are going to indulge and use salt, use the good stuff. With that said, when I was making these Salty Herbed Smashed Red Potatoes, I knew I had to go for the good stuff; the big chunky kosher salt. By loading these bad boys up with kosher salt, ...

Samosa Stuffed Baked Potatoes
Have you ever had a samosa? Considered Indian food, they are little deep fried shells that are filled with a mixture of mashed potato, onion, green peas, spices and green chili. They are usually served with a little sauce on the side as well. They are SO delicious. My friend recommended trying a samosa the first time I ever had Indian food, and I was hooked since then. One place we love going, TJ's, has the best bar food ever. My husband loves their cheese fries, as do I, and we always order them. Served with delicious homemade ranch, they are so good, but so unhealthy. I wanted to find a recipe that was a little healthier (still not healthy), and just as tasty. I turned to one of my favorite food blogs, Budget Bytes, and she had a great looking ...
Roasted Rosemary Potato Wedges

The recipe called for pre-packaged potato wedges, but I decided to make them from scratch since I couldn't find those at the store (super easy anyway). I would consider this a 'pantry recipe', because you probably already have all the ingredients in your pantry (maybe not the potatoes, but close enough!). These potato wedges would be a great side to any meal. They have only 2 WW points per serving (1 cup of wedges), so you can have a generous portion. [yumprint-recipe ...
