Today we have another guest post from Shannon! If you didn't see her first guest post, Guiltless Fettuccine Alfredo, I highly suggest you check it out! Here she has whipped up her take on Barbacoa (and I am embarrassed to admit that I had not even heard of this!). Looks tasty! Barbacoa (A Happy Accident) Meal planning and grocery shopping is an art form for me. By the time I’m done with my weekly grocery list, it is full of notations. I star items for which I have coupons, mark BOGO deals and other weekly specials, and mark which stores some of the items will ...

Crock Pot Asian Pork with Mushrooms
Browsing one of my favorite healthy cooking websites, Skinnytaste, I found this recipe for Crock Pot Asian Pork with Mushrooms, and I thought my boss would likely enjoy it. I don't eat meat, but the picture of this Asian pork dish looked delightful. It's a plus that it's super low calorie, and would probably be really good over rice, noodles, or just by itself. The only thing I changed up a bit was the meat. I couldn't find a huge pork roast so I just used a pork loin and shred that up. I also just put everything in the crock pot from the beginning. It often ...
Chinese Broccoli & Zucchini
A while back I made a recipe for some Beef and Broccoli (wight watchers recipe), and I noticed that the sauce was delicious. I decided to try it with just some veggies, and it has been the base of all my Chinese food in the last 6 months. The sauce tastes just like any sauce you would get from a Chinese restaurant, but doesn't have all those unknown ingredients. I love being in control of making my own 'take-out', because I know exactly what is in it, and I can make it a lot healthier. This is also such an easy recipe because you can really take any veggies ...
Pecan Crusted “Fried” Chicken
I made this recently for my boss and I thought it looked really good. It seems like a great alternative to frying chicken, it is healthy, and it was really easy to make. The recipe was found in the Weight Watchers Just 5 Ingredients cookbook. It has 5 or less ingredients, and doesn't take long to cook at all. The recipe has 6 weight watchers points per serving (4 servings). The recipe is pretty inexpensive as well, so that is great if you are on a budget. I would also say this is good for kids and could be a nice alternative to chicken nuggets. You ...
Crock Pot Thai Peanut Pork
This slow cooker recipe is a staple for my bosses. I make it a couple times a month, so I think it's a big hit. Even the kids liked this one! It is easy to throw together in the morning in the crock pot, and by the later afternoon the house is smelling delicious. It is truly one of those all day long crock pot recipes, so if you don't have a crock pot that has a timer on it this is perfect. It takes 8-9 hours to cook. I think this recipe over rice or quinoa would be really tasty, or a nice side veggie like roasted carrots would be ...
