In an effort to spend more time as a family eating, we decided to throw together an Easy Cheesy Veggie Pasta Bake for dinner. Taking less than 20 minutes from start to finish, it is a super quick and easy family friendly meal. Who doesn't love pasta, anyway?! First, I boiled some water and added the noodles. While those started to cook I diced up some zucchini and mushrooms. When the pasta was about 2 minutes from being cooked, I tossed those veggies right into the water with the pasta, and let cook for the remaining 2 minutes. Next, I drained the pasta/veggies, and then added them ...

One Pot Wonder Tomato Basil Pasta
When I saw this recipe a few months ago, I was very skeptical. I mean, I have never seen a pasta dish cooked in 1 pot, without even having to strain the pasta. However, if Martha Stewart is putting it in her magazine as an 'amazing' recipe, then I am going to believe that the people over there have tested it out and approved. So, I added it to my menu plan a few weeks ago and never looked back. A great thing about this recipe is that it's likely you already have all the ingredients in your pantry and fridge. It's also very inexpensive, doesn't use a lot of ...
Buffalo Quinoa ‘Mac’ and Cheese….with Broccoli!
So this is just an update of a previous recipe, but it's still worthy of a post! I followed the recipe for Buffalo Quinoa Mac and Cheese, and added broccoli. Lets take a look back at the original Buffalo Quinoa 'Mac' & Cheese....mmmm Anyway, I realized that you can add any veggie you like in regular mac and cheese, to bulk up and add extra healthy filling to this protein packed recipe. Last night I even tried it with cauliflower, and I couldn't even tell the cauliflower was in there...the texture was almost identical to the quinoa! With this recipe being under 500 ...
Arugula Lemon Pesto
Last week I was browsing at the grocery store when I noticed a big container of Spicy Wasabi Arugula on sale. Regularly $6, I snatched it up for just under $2 and didn't look back. But Wasabi Arugula....what could I use this for? I recalled the spinach pesto I made for grilled cheeses not too long ago, and thought I could probably use this arugula and do a pesto with it.....pesto doesn't always have to be made with basil, right? So I figure this pesto can be made with any type of arugula, or green leafy veggie. I also wanted to cut down on the oil a ...
Guest Blog: “Guiltless” Fettuccine Alfredo with Sautéed Mushrooms & Broccoli
I have noticed more and more recently a lot of 'Guest bloggers' being featured on some of the blogs I follow, and I decided I wanted to give it a try! I love sharing recipes with friends, and I know a lot of people that are kind enough to share their recipes with me! I am part of a 'Menu Planning' group that gives me inspirations for recipes, and keeps me in check (most of the time...) with my weekly meal planning. Since I started my blog a few months ago, the group has been really supportive of my blog and recipes! I thought it would be a great place to start to ...
Linguine in Tex-Mex Pepper Cream Sauce
This is a super quick and easy meal to throw together. You probably have a lot of the ingredients already, which make it cheap too! You can throw most of the ingredients (ok not the pasta) into the food processor and save yourself a lot of prep time. The taste in this recipe came together very nicely. The original recipe called for pumpkin seeds as a garnish, but since they didn't carry them at my local grocery store I opted to leave those off. It may have been a nice addition, but without them the recipe did not feel like it was missing anything. Also, since I ...
