This specific recipe calls for bacon, but you could leave that out for a vegetarian potato salad as well. The Dijon sauce is tangy, yet not too tart. This is a super quick and easy meal to throw together. You probably have a lot of the ingredients already, which make it cheap too! You can throw most of the ingredients (ok not the pasta) into the food processor and save yourself a lot of prep time. The taste in this recipe came together very nicely.
