I am going to be honest and tell you right off the bat that I have never actually tried Beef Stroganoff. It wasn't a meal that was ever cooked for me, and the only time I have ever seen someone eat it was while I was on vacation in Russia (it’s quite popular over there)…but it didn't really appeal to me. By the time I really started cooking, I was a vegetarian and I never gave it a second thought. Flash forward to now, and in comes Mushroom Stroganoff (skinny style!). I frequent Skinny Taste, do you? If you answered yes, we are on the same page, if you said no, ...

Crock Pot Asian Pork with Mushrooms
Browsing one of my favorite healthy cooking websites, Skinnytaste, I found this recipe for Crock Pot Asian Pork with Mushrooms, and I thought my boss would likely enjoy it. I don't eat meat, but the picture of this Asian pork dish looked delightful. It's a plus that it's super low calorie, and would probably be really good over rice, noodles, or just by itself. The only thing I changed up a bit was the meat. I couldn't find a huge pork roast so I just used a pork loin and shred that up. I also just put everything in the crock pot from the beginning. It often ...
Mushroom and Gorgonzola Baked Polenta
Last week I was lucky enough to receive a package from Bob's Red Mill with a couple of their products that I have been dying to try. I have been a big fan of BRM for a while, but I still haven't samples all of their items (check out their website, they have a ton-Wow!)! I was so excited that they sent me their Polenta, Quinoa (if you read my blog, you know how I love quinoa), and rolled oats. All of their products are all natural and organic, and they have a ton of gluten free flours and products as well. I have cooked with quinoa and oats a lot in the past, ...
Baked Eggs with Spinach and Mushrooms
Oh look, another baked eggs recipe!! I love eggs, so finding ways to incorporate them into a healthy hearty dinner is always exciting for me. This recipe was simple, quick, and on the cheap side...total win! The dash of nutmeg in this dish gives it a little flavor that you aren't expecting, and it's perfect for fall. I wouldn't hesitate to serve this for breakfast, brunch, lunch, or dinner! This time, I made it for dinner and served it with a side of roasted lemon cauliflower...yum! This recipe is also very low calorie for a dinner/meal. I ...
Hot & Sour Soup
We love Chinese food over at my house, but we don't really order it much because I haven't been able to find a place that doesn't cook with an excessive amount of oil or msg. I found a recipe for Hot and Sour Soup over at the JessFuel blog, and with a couple of little changes I gave it a try. It turned out really great, and was easy to make. It makes a HUGE pot of soup, probably around 6 servings or more (big servings). I made it with ginger garlic broccoli and zucchini, and it was delicious. I will post the recipe for that later this ...
So You Want to Shop at Costco? Here is What You Should Buy!
Lately I have been shopping a little more often at Costco, but it is still difficult for me to spend more than 10-20 minutes at a time in there. I always have my 19 month old son with me, and often he screams until I take him out of the cart seat. He loves to 'push' the cart around, and usually this would be okay if it were the middle of a random weekday, but it's always after work, or on the weekend, and most people that shop at Costco know just how crowded it can be at those times. So, a 19 month old pushing a gigantic Costco shopping cart into every display, leg, ankle, and little kid ...
