A couple months ago I posted about some ‘Zax’ Sauce that I made, and judging by all the responses, people loved it. I guess everyone loves a good sauce, and often times I find myself loving a sauce over whatever food is being sauced. The sauce usually packs the punch of flavor, and my husband always says that (insert whatever food here) is just a vehicle for the sauce….whatever the sauce may be. So I started thinking about what other sauces people love, and immediately I thought about the sauce that gets served with the Bloomin’ Onion at Outback Steakhouse. It’s tangy ...

Skinny Mexican Corn Salad
When I first saw this recipe, it reminded me of the corn that my friend introduced me to in Brooklyn. We hit up a newish/upscale Mexican Restaurant and she raved about their amazing corn with chili powder and cheese. I was skeptical (mainly because it involved a mayo sauce, and I am not a huge fan of corn to begin with), but I decided to give it a try anyway. I was blow away by the flavors coming together, and how perfect everything blended. Flash forward 3 years later, this corn is popping up everywhere, and I hear people talking about it all the time! Recently I ...
Provolone White Bean Grilled Panini with Basil & Tomato
When I first saw this recipe I knew I had to try is asap! It looks so delicious and creamy, yet not too unhealthy. I had never used white beans in a sandwich before, and while intrigued, I was a little skeptical that it would resemble hummus. I used to love hummus, but since I had my son I cannot eat it. Just having a tiny taste of it makes me have the worst chest pains. Same with avocado anything. It is so sad. My doctor said that it's the texture getting stuck in my esophagus and that's that is producing the pain....so I try to avoid anything that might be ...
Low Carb Crab Cakes with Mustard Sauce
Did you know that carb and crab are essentially the same word? Usually crab cakes are loaded with bread crumbs, which make them a higher carb dish, but this recipe does not have bread crumbs, making it lower carb. The mixture seems very loose when you first mix it, and it seems like the cakes will fall apart when you put them in the pan, but if you get the pan pretty hot before you add the cakes, they stay together and crisp up very nicely. They are accompanied by a mustard sauce as well. I think these crab cakes would be as an appetizer to be served at a party, or even ...
