I love Chinese take out, but sometimes it’s hard to find a great place (especially since we moved from NYC to Atlanta), and after eating all that MSG I get a massive headache. However, I can never seem to get my favorite recipes replicated just right….until now. After seeing a recipe for some General Tso’s Chicken, I thought, ‘Why can’t I make this with tofu?’ The meat is really just he vehicle for the sauce, right? I knew that I wanted to get nice crispy tofu though, and wanted to mix it up instead of baking or dry frying the tofu like how I usually make it. I looked up some ...

Super Simple Buffalo Potato Wedges
So, I really wanted to post these Buffalo Potato Wedges before the Super Bowl, because they are the perfect game-day snack, but laziness got the best of me. I am generally a very on-the go, always busy, always working, always doing something type of person, but these last couple months have really been kicking me in the butt! Everyone keeps telling me it’s being pregnant that is causing this ultra-laziness, but I can’t accept that (but maybe I have to?)! I need to do so many things, I don’t have time to lounge around for 2 hours on the weekend, I just don’t! I guess I need to realize ...
Coconut Almond Bites
I don’t know why, but I was at least in my 20’s before I tried an Almond Joy candy bar. For some reason I always thought that I didn’t like them. Maybe I tried them when I was a kid and forgot, but I had this weird negative association with them. Finally one day I decided to try one…and I loved it. I love coconut, almonds, and chocolate so the combo makes sense to me. While they aren’t something I eat often, I do enjoy them once in a while. So, when I had a bag of left over coconut, I started brainstorming what I could do with it. I browsed Pinterest and didn’t find ...
Chocolate Almond Cheesecake Bars
As everyone knows, the holidays are an incredibly busy time of the year. We have Thanksgiving and then a few weeks later are celebrating Christmas. We even have my son’s birthday between the two holidays, which makes it even crazier. While I love the holidays, I also like to take time to relax and enjoy our friends, before things get too stressful. For the last few years we have taken a night off from all the stress, and had a little holiday party where we get together with our close friends, and just enjoy their company and be free of all holiday stress. I ...
Cookies & Cream Cookies
For the longest time I have been wanting to bake a cookie in a cookie…have you heard of that? I have seen recipes where they use Nutter Butters, inside of peanut butter cookies and whole Oreo’s inside of chocolate cookies. They all just look so cookie-licious. I decided to mix it up a bit and use Oreo's for this cookie, and do a play on cookies n’ cream. The cream of the Oreo and the chunks of chocolate really balance out this simple sugar cookie base. I have seen a few recipes out there that are similar, but add chocolate chips to the cookie as well. This would be delicious if ...
Skinny Tomato Basil Soup
Look familiar? This soup probably doesn’t look familiar, but if you follow my blog it might I have a confession…. I actually posted this recipe 11 months ago, but I was always a little embarrassed to share it, because the pictures were really bad. I know no one likes looking at pictures of food that doesn’t look appetizing, and that was a problem I was having. I will even share my embarrassing photo with you…. Maybe it’s not the worst picture ever, but it sure isn’t great! Having bad light or a bad camera can really be a disadvantage. Back then I didn’t ...
