Skinny Bruschetta Chicken has delicious juicy grilled chicken topped with a fresh tomato bruschetta! It’s the perfect healthy dinner!
When I first made this Skinny Bruschetta Chicken, I thought it was the perfect meal for a warm day. A couple weeks ago, it was still in the high 80’s here in Atlanta. I wish it cooled off earlier, but it does give me the chance to stretch those summer vegetables. With the basil still thriving, and tomatoes still at peak, this is a cheap, healthy, and easy meal.
You can chose whether to grill, bake, or heat the chicken in a skillet. Season with salt and pepper first, and then get cooking! By allowing the tomatoes to marinate while cooking, they really absorb a lot of the balsamic flavor, which is key when making bruschetta. I super loaded the chicken with the bruschetta topping, so if you put less, you might even have some left over bruschetta for later! Cut up a baguette and serve it together. This Skinny Bruschetta Chicken is amazing!

Tried this tonight. I’m not a fan of onions & didn’t have any fresh basil but it was fresh from my garden prior to drying it. The chicken was delicious before putting this topping on and even better when it had the topping. The only thing I would change would be more balsamic. Yummy dinner. Thank you.

Pinned! Can’t wait to try this, it sounds yummy and it’s healthy too which is a bonus (I’m a slimming bride to be so healthy recipes are heaven especially since I’m a carb addict). I was wondering what would be good to have on the side…I was thinking maybe grilled courgettes / zucchini and red peppers (i always need something on the side!). I was going to say that during winter I grow some basil indoors in a plantpot on the kitchen windowsill and it usually survives all winter with a little care and attention (we don’t get good enough weather in Scotland for it to thrive outdoors). I just thought I’d mention it so you don’t have to go without yummy fresh basil in the winter months.
Hey Lynsey! Thanks for stopping by! I think those sound like fabulous sides! I think even a big side salad would be great with this meal! Or even some quinoa or cous cous if you are feeling carb-y! I definitely need to get on the ball with growing basil inside…but I am sad to say I don’t have any place I can really put the plant! All of our windows are in funky places and can’t really host a plant so I am afraid it wouldn’t get enough sun and it would die 🙁 Anyway, I hope you love the recipe!
I made this last week & loved it!! Served with cooked barley & for leftovers I cut the chicken & put it with the topping & barley for a “healthy” bowl. Even hubby enjoyed it!! Thanks!

I tried this tonight and it was a hit! My red onion was actually bad so I used a yellow one and it worked out fine. The balsamic amount was perfect for me and glad it was less because if you do anymore, you can’t go back. I made a side of homemade mashed potatoes and yep, it was delicious! So easy but so flavorful. Thank you for the recipe, it will be in the rotation now.
I made this last night and it was so tasty. Will definitely make again. Baked chicken in the oven and have lots of leftover yummy bruschetta.

Yes!!! You can use My Fitness Pal. THey have a website and an app, but you can literally just put the ingredients into it, and it will calculate it. Or you can copy and paste the recipe link into their tool, too, and try to match it up. Here’s the link: http://www.myfitnesspal.com/recipe/calculator
Yum! Bruschetta in the summer is the best. We have fresh tomato and basil plants at my house, and it makes for the BEST bruchetta!
