In case you haven’t noticed, Christmas is right around the corner, and you need to get your baking plans in order! I’m not much of a holiday baker, but this year has been a little different. Cranberries have been calling my name nonstop, so I have been baking up a storm with them. I made a batch of macadamia nut cookies a few weeks ago, and then I realized that they would be amazing with a little dunk of white chocolate and sweet, yet tart, cranberries…and so they were born- Cranberry White Chocolate Macadamia Nut Cookies.
Trust me when I tell you, these cookies are easy to make, and super delicious. They are really gorgeous too, which is a big bonus of cooking with cranberries..they are gorgeous and so vibrant. I love working with fresh cranberries and dried cranberries; they both have their own strengths. I kind of with I could find fresh cranberries all year round, but it seems they are only ever in the store during the holidays. I think I’m going to stock up this year, and freeze a bunch. Did I mention I really love cranberries?
Whether you are hosting a holiday dinner or party, or attending a potluck, you need to bake these and share them with everyone. Everyone will love you. Thank me later.
